The art of Thai cuisine is essentially one of creation, experimentation and improvisation. It has been oral tradition, handed down from family to family-through generations. There are many ways to make a dish, as there are cooks to cook it.

At the heart of Thai cuisine lies herb coriander pak-chee which is an essential ingredient. It is lightly aromatic and is used in many dishes. At the other extreme is the famous chilli, phrik kee noo the hot test, most lethal ingredient used. Not all Thai dishes are incendiary hot, but hotness is a hallmark of the cuisine. The amount of fire is a matter of individual preference, so please do not hesitate to ask for either a roaring fire or just the warm one.
